How Do You Cook The Humble Chook?

Chicken is not only one of the most popular foods worldwide, but one of the most economical forms of protein.

On average we consume over 15 kilograms (33.06 pounds) of chicken per person each year.

That’s a lot of chicken!

So we don’t get bored of the humble chook you will find some recipes below.

1. Chicken Rice Casserole

Ingredients:

  • 1/3 cup plain flour
  • 1.5 teaspoons salt
  • 1/8 tsp pepper
  • 1 cup chicken stock
  • 1.5 cups skim milk
  • 1.5 cups cooked rice
  • 3 chicken breasts, cooked
  • 100g (4 ounces) mushrooms
  • 1/3 cup green capsicum (pepper), chopped

Extra herbs and spices can be added to taste.

Method:

  • Pre-heat oven to 180°c (350°f)
  • In a large saucepan blend flour, salt and pepper
  • Stir in chicken stock and skim milk
  • Stir constantly over low heat until mixture is smooth and bubbly
  • Bring to boil & stir for one minute
  • Add remaining ingredients
  • Pour into baking dish
  • Bake uncovered for 40 – 45 minutes
  • Serve while hot

2. Chicken Noodle Soup

Ingredients:

  • 500g (17oz) chicken breast, diced
  • 100g (3.5oz) egg noodles
  • 1 onion, finely chopped (or 1tsp onion powder)
  • 1 garlic clove, crushed (or 1tsp garlic powder)
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1.5l (50fl oz) chicken or vegetable stock
  • 2 tbsps olive oil
  • 1 tbsps mixed herbs
  • salt & pepper to taste
  • crusty bread to serve

Method:

  • Heat oil in large saucepan.
  • Fry onions until soft
  • Add carrot and zucchini
  • Add stock & cover saucepan
  • Bring to boil, reduce heat, simmer for 15 minutes
  • Add chicken, noodles and herbs
  • Simmer for 10 minutes, until noodles soften
  • Season with salt & pepper
  • Serve with crusty bread

3. Chicken Nuggets

Ingredients:

  • 4 chicken breasts, cut into pieces
  • 3 eggs, whisked
  • 2 cups plain flour
  • 2 tbsps chicken or vegetable stock powder
  • 1 tbsps mixed herbs
  • 2 cups breadcrumbs
  • salt & pepper to taste
  • Oil of choice for frying (I use rice bran oil for its light taste and high smoke point )

Method:

  • Place flour, whisked eggs and breadcrumbs in separate bowls
  • Add stock powder, herbs, salt & pepper to breadcrumbs
  • Coat chicken pieces in egg, then flour, then breadcrumbs
  • Place on a plate and refrigerate for 1/2 an hour
  • Heat oil in a frypan
  • Cook in batches until brown
  • Drain on paper towel

Serve with garden salad and crusty bread

Note: This recipe can also be used to make crumbed (breaded) chicken breast fillets.

4. Slow Cooked Chicken Casserole

Ingredients:

  • 10 chicken drumsticks
  • 1 bottle passata
  • 1 onion, sliced (or 1 tsp onion powder)
  • 2 garlic cloves, crushed (or 2 tsp garlic powder)
  • 4 potatoes, peeled & cut into pieces
  • 1 zucchini, chopped
  • 1 carrot, chopped
  • 3 cups chicken or vegetable stock
  • 1 tbsp mixed herbs
  • salt & pepper to taste

Method:

  • Place all ingredients in slow cooker bowl
  • Cover & cook on low/medium for 6-8 hours or high for 4-6 hours depending on your slow cooker setting
  • Serve with crusty bread

Note: Chicken will not brown in the slow cooker, so brown in frying pan first if desired.
