Cheese and Bacon Scrolls

We make cheese and bacon scrolls in the slow cooker at least once or twice a month. It is an easy lunch meal and Miss 12 usually makes it herself. (Although, I do cook the bacon for her).

My slow cooker isn’t really very big and, as a family of five with two teens and one pre-teen (who are always hungry), I’m constantly on the lookout for a big family sized one.

Ingredients

  • 2 cups self-raising flour
  • 1/3 cup butter or margarine, melted
  • 2/3 cup milk
  • 8 slices short-cut bacon, diced and cooked
  • 2 cups grated cheese

Instructions

  1. Place flour, butter and a splash of milk into a large bowl and mix, gradually adding more milk, until you have a pliable dough.

  2. Roll dough out onto a floured board. Shape into 20cm x 30cm rectangle.

  3. Sprinkle with cooked bacon and cheese.

  4. Beginning at the short edge, roll into a log.

  5. Slice log into 2cm slices and place in a baking paper lined slow cooker.

  6. Place a clean, dry, teatowel under the lid of the slow cooker and cook on high for 2 hours until the dough is cooked through and the cheese is melted.

Recipe Notes

The dough can be used for all types of scrolls ie: apple & cinnamon, pizza, cheese & vegemite, Nutella…

I am constantly playing around with my recipes. With this one, I will be adding some Italian herbs and/or spices to the dough to add extra flavour.

Mr 16 loves spicy food but Miss 12 doesn’t so it’s a delicate balance to get a flavour they all love.

Enjoy xx
